In no particular order...

Moonstone (Amiga) - The first game ever to have a rating (in the UK anwyways, it was a 12). Blood, guts, and rpg.
The Secret of Monker Island 1&2 (Amiga) I almost cried at the end of #2
Micro Machines V3 (PS1) - 8 player screaming and shouting action. *sigh* thems were the days
Goldeneye (N64) - Best 4 player game of it's day, great 1-player game too
GTA : Vice City (PC) - nuff said.
Super Mario 3 (SNES) - Only the best platformer of all time
Cannon Fodder (Amiga) - K-k-k-kill him with your gun, so much fun, WAR!
Legion (Amiga) - A shareware game made in Amos by a bedroom programmer, crippled with no save. I downloaded the full free version a year or so ago and finally played it to the end. What a game!

1. Diablo2: Lord of Destruction (die baal, DIE)
2. StarCraft
3. Perfect Dark
4. BattleField 1942 (and Desert Combat mod)
5. Metal Gear Solid (series, although the indoor scenes in #2 are the best, along with the enemies )
