Comment which game's source you would like to have.

For starters my top ones are:
Minecraft
SH2

EDIT: I would rather have MineTest (witten in irrlicht) than Minecraft, and guess what? It is already open-source

GuildWars - they are said to have this nice entity-component system and an incredible update system.
The Sims 1 - my sims had this paper stuck on the floor which couldn't be removed anymore, maybe I could see how clean that up ;-)

I would like to have World of Warcraft server code with all scripts for missions, spells etc.
In past I was working a bit on private WoW servers (developed by reverse engineering) - lot of problems, lot of not working things.
I am wondering how the original server code looks, how it's organized, how everything works.

Morrowind source code would be nice, there are also guys that reverse engineered .esm and .esp files to run morrowind without the morrowind executable (you still need original esm and esp files from original Disk).

Minetest is an open source version of minecraft, it is better in quite alot of ways (c++, irrlicht, lua) but of course lacks features
