Audacity is a free audio editor. You can record sounds, play sounds, import and export WAV, AIFF, Ogg Vorbis, and MP3 files, and more. Use it to edit your sounds using Cut, Copy and Paste (with unlimited Undo), mix tracks together, or apply effects to your recordings.

Not bad , I use it to record my band , but when doing multichannel recording is very laggy , up to 0.2 seconds , which is unacceptable.
Anyway ,for single - channel recording is the best open source audio software available , and It's at the same level of the commercial GoldWave.
The linux version has still a lot of bugs ( multiplexed recording doesn't work very well...)
