here is the model creation workflow
1-imagine ur model/draw it from 4 directions
2-learn a 3d package (use blender)
3-use ur drawing as a viewport image(learn blender to understand)
4- model
5-create uv`s
6 do bones and skinning
7-export in an irrlicht friendly format

Yeah, I also recommend Blender3D, even though it may quite a learning curve, it is very powerful. Good luck!
